Description:
Under limited supervision, is responsible for the daily preparation of food items and other nutritional services to patients, their families, and Mercy guests. Works both bulk prep area and line station areas as needed. Assists in keeping the department clean, organized and well stocked. Works to ensure efficiency in food preparation by following recipes while maintaining appealing plate presentation and quality tasting food. Other responsibilities may include tray assembly, distribution and service. What you will do:
  • Prepares all food items in a sanitary and timely manner. Operates and cleans equipment to transform raw food for cooking.
  • Follows standardized recipes, portioning and presentation standards. Completes and utilizes daily production worksheets and waste log sheets. Tastes completed meals to ensure quality.
  • Cleans and maintains work station while practicing good safety, sanitation and organizational skills. Utilizes safe food handling practices.
  • Restocks food items and supplies as needed to maintain appropriate levels in a state of readiness.
  • Communicates to manager food product needs, i.e., food items, supplies, etc.
  • Communicates any patient or customer related problems to appropriate personnel.
  • Completes all daily, weekly or monthly reports (i.e., daily temperature log) as outlined in the department policies and procedures on a timely basis meeting all prescribed deadlines.
  • Prepares menus and/or trays for all therapeutic diets and is mindful of age-specific preferences.
  • Works to ensure that all food items are properly stored, labeled, dated and rotated as needed.
  • Is able to work all line station areas as well as the bulk prep area.
  • Follows recipes to standardize food preparation and has the ability to determine how to properly cook food products.
  • Assists in training others regarding recipe knowledge and procedures, product specification, plate presentation and other cook duties and responsibilities.
  • Assists in controlling food costs by reporting and stopping waste and over portioning.

What we are looking for:
  • High school diploma or GED required. If you do not have high school diploma or GED must have 5 years of culinary/cook experience in lieu of degree.
  • Must have a minimum of 1-2 years previous institutional or health-care food service experience.
  • Must have a basic understanding of professional cooking and knife handling skills.
  • Must have the ability to read and comprehend simple instructions, recipes, production-system reports, short correspondence and memos. Requires ability to write simple correspondence and to effectively present information in one-on-one and small group situations to customers, clients, and other associates.
